They are using the same transfer from film, however, that does not take into account all the additional processing, tweaking, and compression each company has done on their own. There will be differences in the output which may or may not be noticeable. Blue Underground has claimed they spent a few extra bucks getting this baby to really shine, and it shows.
And as far as I know the SS will only have English 2.0, and the commentary track. BU's has brand new 5.1 and 2.0 mixes, as well as original mono, each in English and Italian.

i'm positive the SS will have 5.1 as well and will trump the BU disc (at least that is what i tell myself to make me feel better about waiting)

Who cares about the remixes,mono all the way baby! 
..and after reading the rave reviews over the Dawn of the Dead 5.1 remix as "this is not your daddies movie anymore,after listening to this track,you will never go back to that outdated mono!". I decided just for the hell of it,to view the entire film once with that mix and ughhh. Sure compared to some terrible mixes,it was not 'bad'..just not 'right'. I then went back and compared a few scenes,mainly the opening credits & apartment raid in 5.1 & mono listening closely..and the mono sounds far better than the remix.
So while people are raving about how great the 5.1 on this title is compared to the earlier atrocious remix. I bet it still won't be all that and the original mono will win over it.
..and I do agree the amount of soundmixes is excessive and overkill. They could have simple had to mixes.

Dawn of the Dead sounded a thousand times better than the frankly boring lame MONO tracks. It came alive for once, and was far supirior for me. Switching between Mono and DTS was a jolt as the mono was just flat and simple, boring is the best way to describe it.
I assume Zombi will be the same, but have no idea as I havent got it yet, as that damn 2 dd edition is just not out quick enuff!

Man... I am still waiting for Zombi 2 (BU) and Devil's Backbone: SE from DDD. They shipped them both out on 7.24, but they still haven't arrived. It usually doesn't take this long to get titles from DDD (although I am really impatient for Zombi 2, so maybe it's just me
