In his defense of The Phantom Menace, Lucas repeatedly used the argument that, "These are movies for children." He'd made similar comments years earlier regarding the lighter tone and Ewok silliness...

The 6.1 sound mixes were created for the 1997 "Special Edition" theatrical releases. At the time, 6.1 was the maximum number of channels available. It was basically 5.1 with a single Surround Back...

Again, they're servicing different markets. Best Buy carries that product in the US and Zavvi carries it in the UK.

Best Buy did previously carry Blu-ray SteelBooks for the Star Wars movies with "faces" artwork that highlighted one specific character on each movie. Zavvi may have had the same SteelBooks, not sure....

As expected, Zavvi now has a 4k SteelBook for Empire Strikes Back. I'm disappointed that the artwork doesn't follow the same theme as New Hope.

Zavvi is a prominent internet retailer in the UK, akin to something like Deep Discount. They have deals with studios to carry exclusive SteelBooks much as Best Buy does here.

I assume you mean the restoration of Empire Strikes Back, which is still pending. The "4K83" version of Return of the Jedi is currently available.

Disney and Lucasfilm have tolerated fan edits and restorations of the Star Wars films so long as the creators don't profit off them. The minute he asks for money is when the lawyers will come out...
