My first instinct was one of the two Almodovar films, but of course there are quite a few films with bullfighters in them.

Someone on the Criterion Forum pointed out that Il momento della verita (1965), about bullfighting, is a Janus property and thus a far more likely candidate. It seems doubtful that Sony would loan out a title by one of their prestige directors.

An Almadovar was my first guess.
Bulworth is an intriguing thought.
EDIT: The suit and tie were what was holding me up. As a reminder, here's the Bulworth poster art:

I'm liking Bulworth as the best guess so far.
Then again:

Well...I guess it's either Bulworth or Talk to Her, and I'll get shocked if it's something else.

I seriously doubt it. RB is already available in a nice SE from MGM that was even reissued this year. I don't see them licensing that one, and IMHO the existing disc is good enough that it would be better for Criterion to focus their efforts on titles not available at all or only in lackluster versions.

Serious guesses:
Talk to Her
Matador (Almadovar)
Viridiana
The Furies
Carmen
Jamon Jamon
The Sun Also Rises
Touch of Evil
Not likely:
Giant
The Bullfighter and the Lady (Budd Boetticher)
The Matador (Brosnan, Kinnear)
8 Seconds (Luke Perry)
Bullhead (Michael R. Roskam)
The Magnificent Matador (Quinn, O'Hara)

I'd love for it to be Talk To Her, but realistically Sony could release it instead and I'd be just as happy.
For a "newer" film, Criterion's audio/video quality wouldn't be that much better than the studios. In these cases Criterion's strength would be supplements, and at this stage supplements aren't all that important to me anymore.

The little suit and tie on the bull is throwing me off as well. If it didn't have the matador outfit as well, I would almost make a Wall Street guess or something along those lines.
I'd be very happy with any Almodovar, but I would be surprised if it were Talk to Her. I would figure that would be one they might hang on to since it's more recent and from a bigger name director.

Criterion Forum has The Moment of Truth classified as a "distinct certainty," which for those who never read there, means "pretty much definite, just a question of when."
There's still debate going on in their thread, though, about exactly what this is. I guess we just wait for the announcement (or one of their Facebook teasers), and then it will be obvious...

I never noticed the suit and tie on the bull on the pic but seeing that along with the still... I'm re-affirming my Talk to Her guess.
Also, probably any catalog title that's not an event film like Jaws or Indiana Jones is up for grabs for Criterion. The studios aren't likely going to release many older titles and I would wager that Criterion will have the largest output of catalog titles of any studio come next year.
