Flashdance.
Come on Paramount, it's the title that your home video division was built upon. I can't believe I have to beg for it like it's some kind of obscure fringe thing.
While I'm at it Streets of Fire would be awfully nice, Universal. That is a fringe film, unfortunately, and I find the non-anamorphic DVD to be much more adequate than Flashdance's anamorphic release from 2002, but it'd be even greater on Blu Ray, and you've already got it ready to print. So get on with it already.

I'm with you on all these titles. Okay, I'll admit I'm not dying for Malcolm X, but it was previously said to be coming out so it will probably get released.
Actually, I think most of these titles are likely. Kundun and The Piano are somewhat iffy but may emerge. (I think there's an import of The Piano available although I don't know much about the quality).
I'd say that the odds are near zero for At Play and The Devils, as they never even got official DVD releases. But never say never.

Re: Your Blu-ray wish list / "When will _______ be on Blu-ray?"
I actually think the only way we MIGHT see blu rays of some of those is if someone like Criterion does it. People have hounded Warner and Criterion about "The Devils" for years. Apparently, Criterion has tried. Warner won't give them the rights, yet they won't release it themselves. They are actively suppressing it. They had it announced at one point in early 2009, complete with awesome cover art and everything, only to cancel it. (That was a standard DVD, that is.)
I've read these interviews with George Feltenstein where he bemoans the lack of catalog sales volume on BD but does nothing about it. And Warner has, of course, been aggressive about catalog releases, compared to some other studios. Licensing these titles they're sitting on would at least bring in some cash, and the license holder can then worry about marketing the films rather than Warner.
I can only conclude that WB feels they'll make more from their more obscure titles by dumping them onto MOD DVDs in the Warner Archive than they will from licensing fees, hence their desire to hold onto these titles.
The Devils, as you mention, is further complicated by the fact that Warner doesn't seem to want it out at all. But if it ever does get released by WB, at this point in time I'm quite confident it would be as an Archive title only.
At Play in the Fields of the Lord is actually my most wanted title at the moment. It's the only movie I bought on VHS that hasn't gotten a digital release. I'd even take an MOD DVD, if it's anamorphic widescreen. But there's no way this is on Universal's radar. It wasn't a big success either critically or commercially. A shame, as I find it much underrated. The only hope is a license to somebody.
As for some of the other titles you mentioned, Criterion currently has DVD rights to Last Temptation and with BD upgrades coming to a few titles each month, I think it's quite possible they may get BD rights as well. The Age of Innocence and Cape Fear, although not the most popular of Scorsese's catalog, are big enough that I think we might get them eventually.
Kundun and The Piano...who has the rights to these now, Lionsgate? So maybe but I'm not holding my breath. The other titles in your original post are all either blockbusters or pretty high profile and probably will get released. Spielberg, of course, has said that Jaws is in the pipeline now.

Re: Your Blu-ray wish list / "When will _______ be on Blu-ray?"
The sad thing about Universal is that they went through this fantastic period in the late 80s and early 90s where they seemed, for a time, to be genuinely interested in making some films that were actually challenging and really about something. Today, they not only are not making those kinds of films anymore, but they do not seem at all to be interested in making those films available (even on standard DVD in some cases, much less BD).
Think back that between 1987 and 1995, Universal made "The Last Temptation of Christ", "Walker", "Talk Radio", "Gorillas in the Mist", "Do the Right Thing", "Born on the Fourth of July", "Henry and June" (the first NC-17 film), "At Play in the Fields of the Lord", "Jungle Fever", (they actually had multi-picture deals with both Scorsese and Spike Lee), and they made a three and a half hour, black and white, career-changing Holocaust picture with Spielberg that you may have heard of. "Temptation", "Right Thing", "Fever", and "Henry and June" all caused genuine controversy, too.
Now, they just don't seem to care about these films, anymore. They just keep re-releasing the same blockbusters again and again. Plus, they're way behind in blu-ray anyway because, back during the "Hi-Def Wars", they went exclusively HD Red, and we know how that turned out.
And any of their challening pictures they keep sitting on. At least they FINALLY put out an MOD version of "Blue Collar", a criminally-underrated Paul Schrader film with Richard Pryor, Harvey Keitel, and Yaphet Kotto that is well worth seeing.

I think I have 3-4 Universal titles in my BD collection, literally.

While we're at it, I might as well vent on my second least favorite studio, Paramount. I'd like to see everything released, of course, but the following are titles I'd most want rescued from BD oblivion. Maybe Criterion could license one or two of the less popular ones, as Paramount themselves will never get around to all of these:
Bringing Out the Dead
Chinatown/The Two Jakes
The Conformist (my favorite Bertolucci)
Don't Look Now (I know Optimum is releasing in Europe; not sure about region coding though)
Nashville
Ragtime
Romeo and Juliet (Zeffirelli)
Rosemary's Baby
The Conformist and Nashville might be good for Criterion; so would Don't Look Now but I believe they've already stated that it's not happening.

Jackie Brown is in the pipeline now. It was announced as a Walmart exclusive for this fall but plans may have changed. It's listed on their web site but no pre-order option is now available. Perhaps it may go directly into general release when it comes out.

Yes I've been following the news on it. As long as it is not on my shelf, it will be on my list. I remember it being "announced" for August 4, 2009 before Miramax's slow and painful death.

I really want The Year of Living Dangerously - the dvd is atrocious and this wonderful film deserves better treatment.
And I really want Criterion to put out the theatrical and directors cut of The Tin Drum in a set.
Another is the complete series of Six Feet Under.

I'd still really like to get:
Planes, Trains, and Automobiles
Team America: World Police (and really all of Trey Parker and Matt Stone's films, I thought with Troma releasing some Blu-rays now that Cannibal! The Musical may come out even though I doubt it'd do a lot of good to come to high def)
Batman: Mask of the Phantasm- come on Warner you released Return of the Joker on Blu-ray which was great to get now this deserves a release too hopefully. Extras would be welcome as well but I really just want it on Blu-ray. Also the other two direct to DVD Batman animated movies would be welcome.
Any Coen Bros. stuff that isn't out or coming out. It's great that we're getting a bunch of releases this year but hopefully at some point all of their titles will see a release.
Jackass: The Movie,Jackass: Number Two, and Jackass 2.5- it'd be nice to get them to go along with the releases of 3 and 3.5.

I would kill for a blu-ray of Moonlight Mile. I saw it on my first date with a girl I dated for five years. Not the best movie ever, but it means a great deal to me.

Needed to update my list, as almost half the titles from it have either come out, or about to. (Including one - Better Off Dead 8/2 - that I forgot to put on it to begin with).
- Empire Records
- That Thing You Do (with the extended version of the film, too)
- Singles
- Splash
- The Three Musketeers
- Tequila Sunrise
- Rock Star
- Some Kind Of Wonderful
- Pretty In Pink
- Scrooge
- Scrooged
Universal's been on a roll lately, so let's hope it's not too much longer until we get...
- Mallrats - had an HD-DVD release, so what's the hold up with Blu Ray version?
- High Plains Drifter
- Bring It On
And hopefully these should all be out within the next year or so now that Lionsgate has acquired Mirimax
- Pulp Fiction (US release)
- The Crow (US release)
- High Fidelity
- Gross Point Blank

Re: Your Blu-ray wish list / "When will _______ be on Blu-ray?"
I want to see this doc--I'll take it on DVD, BD, whatever--almost as much as I want a BD release of Jaws itself. Spielberg, of course, has said that the Jaws BD is in the works, but it doesn't sound optimistic, based on TSISW Facebook page, that it will be included. Who knows. They claim it will see the light of day eventually so let's hope.

When and where is the 2011 Spanish movie "La piel que habito"/"The Skin I Live In", directed by Pedro Almodovar coming to Region A and or Region-Free Blu-Ray?
