I'll throw out some suggestions other than the usual HBO suspects.

Jesus of Nazareth - Franco Zeffirelli's epic depiction is still the standard by which all dramatized portrayals of the life of Jesus are measured.

Jonathan Strange & Mr Norrell - British mini-series set in a historical Victorian type era with magic and fantasy. Without hesitation this is a masterpiece marrying fantasy to Jane Austen's Pride & Prejudice. Based on a novel.

Hatfields & McCoys - 2012 Western series nominally starring Kevin Costner but is in fact a great ensemble period piece.

Steven Spielberg Presents Taken - This is far better than it has any right being as a sweeping mini series on abductions.

V & V: The Final Battle - Great alien invasion fun with a little more depth than you'd expect. Yes, it eventually morphed into an ongoing series which didn't last all that long because it didn't maintain the same quality.

Going way back, and they're probably dated as hell, but Winds of War, and then a few years later War & Remembrance were pretty great for their time. I watched both in high school I think.

Winds of War is great, but remember being disappointed by War & Remembrance. Haven't seen them in decades, so not sure how they stand today for me.

Me neither, and yikes, 1000 episodes? Police procedurals and lawyer shows are not my thing at all, my parents love them and always try recommending me a show in the genre, and I'm like "Nope, not for me", I just find them boring.

Same here. Not the least bit interested in even watching a single episode. I do enjoy Ripper Street (starring Matthew Macfadyen and Ser Bronn of The Blackwater himself, Jerome Flynn), though. That's a fantastic police procedural, IMO, and worth checking out.

Limited Series is the new terminology for miniseries. Sounds more prestigious.

i would definitely say V and V: The Final Battle. those were just amazing and i'm so glad i have them in multiple formats. just a great mini-series or limited series or whatever. V would definitely be my #1.

The terms get changed and redefined within the industry for the purposes of Emmy Award classification.

By current Emmy rules, the second V series wouldn't be considered a Limited Series. Neither would War & Remembrance. Both would still be described as miniseries, though. Just like The White Lotus Season 2 and 3.
