And, what I thought would be the most controversial, I think technically Luke is a good answer. He isn't a Jedi until he proclaims it to the Emperor and at that point, he's thrown his lightsaber away. He may be a Jedi in The Force Awakens, but we also don't see him handle a lightsaber, just stare at it.
