From: The Illustrious State of Fugue
Mob? They weren't even human. Vincent and Jules were Lloiger and Marsellus was a renegade Arch-angel who had successfully captured God in a suitcase. Lloiger are of a completely different persuasion than Angels and Demons. They serve of their own volition and usually as part of a bargain or debt. Obviously Jules servitude was of the latter and he could renege on the bargain at whim.
This was a very allegorical movie, but it becomes clearer on weed.

Beatrix got whacked because she ran out on Bill, disappearing like she was dead, and breaking Bill's heart. At some point later the Squad broke up, because Elle was the only one still hanging around Bill, as his lover. O-ren became head of the Yakuza with Bill's support. Vernita started a new life presumably with Bill's blessing. Budd's Bill's brother, and blood's blood, no matter how bad they piss you off.

From: City of the lakers.. riots.. and drug dealing cops.. los(t) Angel(e)s. ca.
Mobsters? they were hitmen. Hitmen pick their jobs and work for whomever employs them and most of all, whomever they feel like working with. I'm sure they could have left the life whenever they wanted. It's just a damn sweet life to leave.

I don't believe that this is an intended message of the film. Although Jules does leave and (presumably) live while Vincent dies there are several other people in the film who perform evil deeds or live evil lives that walk away happy. If Jules had asked Vincent if he wanted to walk the Earth with him I could see your point.

While not everyone who does bad things (in fact, most people who do bad things) in the film get their comeuppance, it seems clear from the Jules and Vincent scene in the diner that Jules warns Vincent that they had been given a sign from god, and they have to stop killing people, otherwise there will be consequences.

Personally, I always thought the "holy grail" chalice was in the suitcase.

Originally the briefcase contained diamonds. But that just seemed too boring and predictable. So it was decided that the contents of the briefcase were never to be seen. This way each audience member would fill in the blank with their own ultimate contents. All you were supposed to know was that it was "so beautiful." No prop master can come up with something better than each individual's imagination. At least that was the original idea. Then somebody had the bright idea (which I think was a mistake) of putting an orange lightbulb in there. Suddenly what could have been anything became anything supernatural. Didn't need to push the effect. People would have debated it for years anyway, and it would have been much more subtle. I can't believe I'm actually talking about being subtle.

Yeah, it's kind of an old joke. The character wasn't named and people started calling him Seinfeld.

This is the correct answer. It's not the mafia, it's a syndicate with hired guns. Jules is just a hired gun.
