Two quick additions:
The beginning of the warg battle, when the horses and wargs collide! Similar to Braveheart. Just to energetic and realistic and exciting.
The explosion in Helms Deep. Among the best explosions I've ever seen.

Ha, can't believe this one has not made it -
Gimli (with a straight face) - "toss me", "and don't tell the elf"
Other than that, my favs are:
- Gandalf vs. Balrog (hey, in the book Gandalf finished the battle and was "naked" on the mountian - why didn't we get to see that
)
- Legolas looking at Aaragorn when he returns to Helms Deep - "You're late."
- Gollumn/Smeagol getting grossed out w/Sam boiling the cooney.
- And finally each scene where Gollum & Smeagol fight over control. Those were so intreging. The final one was a great end to the movie "yesssss we'll let her do it". The people in the movie who did not read the books first don't really know what he means but trust me "she" is one bad mamma jamma.

Only one favorite? Aw, man...
Most touching: Theoden crying before Theodred's grave. Gandalf, more powerful than ever before, stands nearby, and even he can do nothing to ease the king's grief.
Most breathtaking: the new version of the battle with the balrog (still my favorite part of FOTR), concluding with that epic plunge... (I was thrilled with the brief wrap-up atop Caradhras too, and hope that PJ makes that a bit longer in the extended edition).
Most now-THIS-is-what-films-are-for: the Ents' wreck of Isengard. (Oh please, PJ, make this longer too! I wanna see slabs of stone rocketed hundreds of feet up against Orthanc!)
Most yee-haa!: Legolas leaping? sweeping? is there even a verb for what he did? onto the horse. Visual stunner that popped up during a tense-and-building moment.
I have to mention Gollum's psychological self-duel, but man, too many people in the theatre were chuckling... yeah, there's a comic aspect to it (debates are funny), but it really highlights his torment.
