That crappy cover pretty much guarantees that I'm buying the Steelbook 4K version even if I don't yet know what it looks like.

Well, judging by the fact that many of the other Zavvi preorder Steelbooks (Transformers The Movie, The Dark Tower, Game of Thrones S7, MIB Trilogy) seem to be identical to the Best Buy exclusive Steelbooks in the US, this seems far more likely :

(though that blurb on the bottom indicates this may just be a placeholder)

For me, even native 3D has the same issues of dull colors. No matter how much they turn-up the brightness for 3D, you're still getting a less vibrant color scheme than you would with 2D because there's no getting around the fact that you're wearing tinted glasses.

I don't do 3D, 4K, 5Z, whatever. I'm hoping for a nice Blu-ray SteelBook, or a DigiBook exclusive somewhere.

You see the "Artwork TBC" disclaimer at the bottom, right? In my experience, that means the artwork will change before release. I can't think of a SteelBook initially announced with a "TBC" warning that wound up keeping the image through to release.
It'll probably be some hideous Pop Art thing, following recent trends.

Had zero problem with the theatrical 3D on this (which evidently varies from theater to theater), nor do I suspect I will with the disc (on a 3D set that I've never had to artificially brighten to get punchy colours). In the vast majority of 3D theatrical screenings -- in carefully selected theaters, naturally -- brightness and vivid colour palettes have been impacted so little as to be negligible, and on those handful of occasions (for me) where they were obviously too dull or grayed out, it's pretty obvious who was at fault.

Also, I saw this in IMAX and actually enjoyed the expanded screen scenes. Is there any chance of those being included?

The movie did not have a variable ratio (meaning only selected scenes expanding in height). In IMAX theaters, the entire movie was presented open-matte at 1.9:1. Following the example of other movies that have done this (Skyfall, Oblivion, Prometheus, etc.), I expect that it was actually composed for 2.4:1 and will be framed that way on disc.

Yeah, even Deakins said that he composed it for 2.4:1. The alternate ratios are not legit.

For whatever reason, until a Zavvi pre order goes live, the page will show the title as sold out. I'm not planning on getting the zavvi version so I don't know if its gone live yet, or if its actually sold out. But you should check the blu-ray.com boards.

Somewhat shocked that they could not get anyone to do a good job on the cover art. They've all been awful.

In my opinion, some variant of this poster would have been cool for a steelbook (spoilered for size):

Hmm, nifty looking, but pass.
Was kinda hoping for a special release with that whiskey from the movie.

That model looks like it would be a bitch to assemble.
