John Carpenter's Vampires, and the SE of The Thing.
I was totally hooked by two things: Widescreen and the fact that I could be buying the dvd when when the VHS was at rental prices. Later, after buying a player, did the quality hit me.

Probably The Matrix, I'd spend a whole weekend watching it, going through all the extras, listening to the isolated score (why don't more movies have that feature?) and the commentary. Even by today's standards (video/audio aside) it's still a pretty well done DVD.

Probably the Anchor Bay release of Halloween (the LE with the theater and TV version discs).

Dark City was what hooked me. I felt like I attended an entertaining film class after listening to Ebert's commentary, which was gravy on top of a wonderful movie I'd missed in the theaters.

Two of them for me:
Fast Times and Ridgemont High
and
The Doors Collection
Fast Times has a great commentary, which hooked me, and The Doors Collection has a gazillion features as well as some great commentary from the three survivors over some old concert footage and video collections.

I think the 1st DVD I watched was IMAX Antarctica.
I rented a player from a Mom and Pop DVD store and the guy told me he only rents the machines to each person. After that, they go out and buy their own player.
Well, the guy was right - 5 months later I had my own DVD player.
The Picture and Sound quality, extras and ease of use are what makes people dive into the DVD world.

The first DVD I ever watched was Lost in Space and really enjoyed the picture. It was a gift from my mother-in-law.
I then decided to purchase my first DVD which was Reign of Fire. That really got me going.
Finally I bought LOTR and then I was hooked. Not to mention it convinced me that I needed surround sound.

I know what you mean though. Mine was In the Line of Fire which was one of the first wave released back in April '97. It looks like crap compared with todays discs, but it was great to be finally free of VHS.
