Seriously, I don't see how knowing/not knowing the name impacts the enjoyment of the movie one way or the other. It has zero impact on the plot.

In that film, the name reveals someone's secret identity. The whole film is actually about trying to determine that fact, so to reveal it would obviously be a spoiler.
In Kill Bill, the name is just that... a name. You can call her The Bride, Jane Smith, Black Mamba, Beatrix Kiddo, or Throatwarbler Mangrove. It makes no difference to the way the film plays out. It ain't a spoiler, even if Tarantino decided to play cute and beep it out of the first movie.
