I disagree. I see all kinds of high concept films listed above your post and in the top 250 movies on the IMDB
high concept - refers to an idea that sounds very commercially appealing and in many cases unique and original. Usually associated with big blockbuster films but can reference any idea or script that would appear to have great potential.
And from http://www.screentalk.biz/art043.htm
a term used to describe a script or a film that a person can easily understand after hearing just a few words. Robin U. Russin and William Missouri Downs define "high concept" in their book Screenplay: Writing the Picture as "a movie's premise or storyline that is easily reduced to a simple and appealing one liner."
That page also lists a number of films as prime examples of High Concept films, many of which are included in this thread.

I'd have to say:
-James Bond(any and all)-Disposable and extremely entertaining
-Chapelle's Show-Funny no matter how many times I watch it
-Back to the Future Trilogy-3 of the most entertaining movies of all time
-Clue-Who would've thought a movie based on a board game would be any good. 3 different Endings via branching makes it even more replayable
-Spaceballs-Classic Mel Brooks SW Parody

If I can quote whole sections of the dialogue, then I've probably watched it too much:
Die Hard
Untouchables
Knight's Tale
Matrix
Gone in 60 Seconds
Honorable Mention:
Ocean's Eleven
Bring it On
Die Hard 3
Any of the Lethal Weapons
Bourne Identity

In no particular order
Friday
Jay and Silent Bob Strike Back
Tombstone
Anything by Pixar (can never choose just one)
Office Space
I've watched all of those so many times it's ridiculous.
A few that would be next in line...
Pulp Fiction
Gladiator
Shrek
Matrix
The Green Mile
Honorable mention: Shawshank Redemption

Pretty much off the top of my head.
Heat, Office Space, Some Kind Of Wonderful, Remember The Titans & Ocean's Eleven.
I would throw in Baseketball but no longer have the dvd.

I can't think of 5 off hand
Too much new stuff coming out on a regular basis to rewatch stuff
My most watched one is probably Enemy of the State (although it's been awhile since I've popped that one in too) mainly because there were early reports it was more susceptible to DVDrot than anything else (I do think it's a good movie though).
