-Saving Private Ryan
-Platoon
-Pulp Fiction
Why? because I only have about 6 DVDs. If you are wondering what my other one is, it is Die Hard.

It's interesting for me to note that most of the selections people have chosen are NOT high concept. Probably because they're more complex, and you don't notice everything in one sitting. Look at the top 250 movies in the Internet Movie Database, and almost none of them are high concept:
http://www.imdb.com/top_250_films
Since I've posted, here's my own list:
Fight Club
It's a Wonderful Life
Monty Python and the Holy Grail
Raiders of the Lost Ark
The Shining
I would have included Star Wars (original release) if it were available on DVD. The unaltered Star Wars Trilogy is the only thing I own on videotape I still watch.

At my house, the most rewatchable are James Bond movies. I have all of them, and we just cycle through them in order and then start over. The plots are so (nonexistent? similar? unmemorable?) that each time is like watching for the first time.
If my wife picks a movie, it's invariably the first Charlie's Angels movie. We must have watched that five times already.
Edited to add my personal favorite rewatchables: That would be Godfather I and II.

The Godfather
Fight Club
Office Space
Gladiator
Entrapment (can't go wrong with Sean Connery and Catherine Zeta-Jones)
...on a side note, the two least watched (actually, never watched) dvds that I own
LOTR - The Fellowship of the Ring EE
LOTR - The Two Towers EE
(These were both gifts from family who only knew that I collected dvds. They didn't know that I can't stand the LOTR movies. I only kept them because I didn't want them to feel bad.)

Pulp Fiction - Obivous choice for most.
Family Guy - Hilarious show that doesn't get old.
The Big Lebowski - Claimed the most re-watchable movie of all time, I'm not sure about that, but it's damn good.
South Park BL&U - My all time favorite movie, I'd have to go with it.
Good Will Hunting - A great character driven movie. It's one of my favorites, and there isn't a scene in the movie that I don't like.
As for most recent, I'm finding that School Of Rock is highly re-watchable. I've gone through it a few times already, and it's still just as entertaining.
