MEMENTO was indeed a shit menu. I don't even bother with that disc because it was so annoying.
I do like some creative menu interfaces though...but they get way out of hand.
the LE edition of HALLOWEEN was cool.

It's been awhile since I saw it, but I remember really liking the menu for A Bug's Life.
I like a kind of middle-ground as far as animation goes - static menus are just plain boring, and I'd like some kind of movement. But, too much and the menu becomes truly annoying. I'm fine with transitions, too - as long as they're short, which most of them unfortunately aren't.

Do The Right Thing: Criterion Collection
...and probably tons more I can't think of right now. I tend to favor menus that somehow tie into the movie itself, and I don't really like those overdone 3-D menus much (The Abyss, Die Hard, etc.).

i hate static menus, im never in such a hurry that i cant sit thru a menu. on the other hand, i dont like the ones that keep looping, play through once and then get static.
as for which ones i love, House Of 1000 Corpses is probably my favorite, House On Haunted Hill (remake) and From Hell are awesome too.

Rejected has a really funny menu.
The special features are marked as "WASTE TIME" and you're greeted by the "Mah spoon is too big!" guy when you go to that menu.

I like the Godfather menus.
Reasonable length of background music, and the video, while definitely moving, is never obtrusive. I do not, however, appreciate the spoilers in one or two of the menus.

Fight Club has great menus, including the FBI warning that morphs into a Tyler Durden warning. Godzilla 2000 looks great too, with the big angry green guy roaring at the poor folks fleeing beneath him. Monty Python and the Holy Grail has great menus animated by Terry Gilliam.
