As soon as I saw the thread's title, Deathrow immediately came to mind. Given its sales, despite most of its reviews and consumer word-of-mouth, there's no better poster child for this category.
Nobody's mentioned the well-earned M-rating for language the game is slapped with, I believe. If you get this and you have a young kid around the house, you'd probably want to play this without him or her around.

What cracks me up is when I play against my friends we'll continually press the white or is it black button to taunt ie. Swear! It almost becomes a shouting match.

Hey, guys. I'm the OP of this thread. Since all you invested the time to list and describe your favorite obscure games on the system, I thought it was only fair of me to finally reply and let you know what I ended up doing. Maybe it's just me, but whenever I post in topics like this, I always want to know what the OP eventually decided on.
Here's what I ended up getting:
- Panzer Dragoon Orta: Like the poster said, it's amazing and beautiful.
- Otogi: Myth of Demons: I hated Devil May Cry but LOVE this. It took me a few levels to get into it, but once I did, I was completely hooked.
- Shenmue II: Not mentioned here but certainly worthy of obscure game status. Woefully underrated series.
- Gunvalkyrie: Frustrating yet addictive.
- Halo: Have any of you ever heard of this one?
I am definitely planning to get Beyond Good & Evil. I had the PS2 version, but I returned it because it was still unopened by the time I got an Xbox, and since the Xbox version is supposed to be superior, I'll just get that instead.
I'm also considering Oddworld, Grabbed by the Ghoulies, the ORIGINAL Buffy (it seems impossible to find at a decent price), Serious Sam, and Jet Set Radio Future. I'm not sure how good a couple of those are, so if any of you have played them, feel free to chime in with your thoughts.

I was searching for something else and found this old post I created.
I figured I'd bump it up with an update. 
I stand by everything I said above about Panzer Dragoon Orta, Otogi: Myth of Demons, and Shenmue II. However, Gunvalkyrie, which I originally called "frustrating but fun," is just plain frustrating to me now.
Since then, I've picked up BG&E (great game), Oddworld (very cool), Jetset Radio Future (true hidden gem), the original Buffy (great fun), and Quantum Redshift (AWESOME game that got an undeserved bad rap from the mags and sites).
I never got the Xbox version of Serious Sam, but I did pick up the sequel on GameCube. It's fun, but it gets way too hard way too quickly (IMO).
One I'd personally recommend is XIII. It can be found for $10 or under if you wait for a deal. It's a very fun and stylish FPS. Ignore the reviews that claim "all style, no substance." I disagree.
Another great game is Mercedes-Benz World Racing. Sure, there are some minor things to nitpick (driving through trees, driving over water like land, etc.), but overall, I haven't played a racing game this well-designed in years. Great graphics and gameplay and truly amazing tracks. Don't let the sour reviews turn you off. At least give this one a try.

QUANTUM REDSHIFT is a great game that also didn't sell well. If you liked the original WipEout series at all, you'll get into this one.

Yup Deathrow is a good Multiplayer futuristic Sports title. Think Ultimate frisbee with basketball, with Violence and a whole lota swearing! I Like the game so much I have 8 copies! for my boxes so when friends come over they get their own screen!
btw you can play 1-4 on each box so You technically could have 8 friends over on 2 boxes. hmmm obscure crimson sea: balls out shooter with tons of enemies.
Kingdom Under Fire: very cool action strategy hybrid Like playing the huge battle sequences from the Rings movies. granted the music is annoying 80's metal bleech!
Outlaw golf 2 and volleyball: actually pretty well made sports games fun with friends and crude humor but if your an adult thats fine.
world championship poker: budget title but good if you have LIVE and like texas holdem
Pirates of the Carribean: albeit buggy at times think morrowind in a pirate setting. Get's really cool when you have a fleet of ships in your control.

I want to throw another vote in for Metal Arms. A pretty cool platforming/adventure type game like Ratchet & Clank with a cool split screen multiplayer to boot. I heard that the GC and PS2 versions were sorta bad, graphically, but the Xbox version was okay. A lot of fun, a ton of funny dialog, and tons of mechanical carnage . . .

Serious Sam on the Xbox is great. Nothing like 100 enemies coming at you at once. I didn't find it too difficult either. The game goes on forever as well. I made it to around Chapter 5(I think) and that was after countless hours of gameplay. Just didn't seem like it would ever end. At that point I started using cheat codes. I am vehemently against them normally, but this game is so brain-dead that it doesn't even matter.
I just picked up 3 games recently. Picked up Rogue Agent and Alter Echo both of which rated higher than 7 at IGN. Also picked up Crash Nitro Cart, which can be addicting. Not as fun as Mario Kart, but it has its moments.
Put Grabbed by the Ghoulies on my Christmas list(saw it used at EB for about $12). Hopefully that one is pretty cool.

I'll throw my vote in for Beyond Good and Evil. Very enjoyable game and you can get it cheap. Enclave it another great (and cheap) game that kind of flew under the radar. It's a bit older but still looks great.

Another vote for Wakeboarding Unleashed with Shawn Murray. Playing as single player is OK but very fun with friends as one person can drive the boat while the other rides the wakeboard. You can also do split screen two player with both wakeboarding at the same time.
It definitely throws in some good comedy like trying to hit all the people in tubes on the lake.
Tricks are SSX3 like and for some reason this game just completely fell off everyone's radar.
If you enjoy extreme sports games and have a sense of humor this is a must have. If you troll you can probably pick this up for $10 or less.
It's also a great game for first time gamers as I have friends that only like to play this game.
Ditto on Deathrow and XIII as good obscure game options.

Pure Pinball: Great pinball game, even better price ($20). It has the best graphics I've ever seen in a pinball game, and the gameplay is fun and addictive.
I haven't played Pinball Hall of Fame yet, but I hope to be able to soon. Ditto for Chessmaster. I could see both of these qualifying for this list as well, but I won't know for sure until I actually have them.
I just got Tao Feng. Seemed fun in a demo, not sure about the real thing yet. Could be another contender.
