Yeah, unlike GCN or PS2, there are no "tricks" in setting up the Xbox for 480p, 720p, or 1080i. Just go to the Xbox dashboard and enable or disable the option to apply the settings for all games.

it doesn't run in 720 p. my friend has a samsung hdtv and it doesn't support that resolution. all we see is static whenever we try. since its plugged in through compnonets, we can't even play the game on that tv. it sucks, but the game is so good we usually lug the xbox downstairs to another tv.

I have a samsung that doesn't support 720p (but does 1080). Just disable 720p in the Xbox control panel. It will default to 480p
and the game runs fine.

It's really stupid how some manufacturers don't support 720p on their supposedly "HD" TV sets, and only support 1080i. 720p is half the HD standard! How can they tag their products as "HD Ready" when they don't even support half the standard. Ridiculous. I'd never buy a HDTV that didn't support 720p.
