I never played Deception 3 - I have it, but never played it. That will be one of those games I spend an afternoon with when I dust off the PSX in a year or so...

Lots of good stuff already mentioned, and I thought I'd add:
X-Com UFO Defense - Not a fps, or a flight sim, but back to the basics turn based squad action.
Phantasy Star - Forget the online crap, gimme a real honest to god Phantasy Star rpg with a good story and character development.
Bushido Blade - No health bars, no nothing. Take the engine of the first one and update the graphics and extras. Three stances, a horizonal attack, a vertical one, a block button, nothing else. Bare bones. You get slashed with a sword, you die, plain and simple
Grim Fandango - One of the greatest pc adventure games of all time, nuff said.

Most wanted would be a true sequel to Baldurs Gate: Shadows of Amn (not like the console versions). It wouldn't necessarily have to follow directly on from the last but just be in the same mold.
Something like a modern remake of Star Control 2 for consoles would be pretty damn fine particularly with an updated melee game (SC3 on pc was disappointing).
I second a proper Phantasy Star rpg as a true followup to the originals. None of this multiplayer rubbish

I know a Streets of Rage game is coming soon but if they stuffed it up then I'd definitely be keen to try my hand.

I would love to see a sequel to Freedom Force. I know there was supposed to be some followup games set in different comic book era's, but I don't know if the game sold well enough for them to make anymore. I'm going to hold out hope. I would love to see a game set in the gritty 80's era.
One another note I would love a followup to Beetle Adventure Racing from the N64. I had a blast playing that game. I wouldn't change anything about the gameplay, just more tracks and all the old ones.

And there's old news Freedom Force is getting the sequel treatment, but who knows if it's ever going to come to fruition.

Also, Irrational did say FF sold well beyond expectations, and surprised EA with how well it did. Surprises me as well, because I didn't think it sold as well as the hype (IGN) led us to believe.

I would definitely second Blast Corps. and add another one: Uniracers. I think the latter would be perfect for the Wii. The former could be a great XBLA title, a $40 budget title, or a full-tilt $60 game.
As for games with sequels, I'd like to see Aero the Acrobat on the DS.

If they ever make Bad Dudes 2, I could die a happy man.
I would also love another No One Lives Forever game. NOLF2 ended with them saying they would be back, but they never came back.
The developers, Monolith, have moved on into the horror genre with FEAR and Condemned, but I wish they would give us another NOLF game someday.
Oh yes, I am a hardcore D&D nerd and would love another true Baldur's Gate game, but I don't see where they could go. The expansion pack, Throne of Bhaal, ends the storyline nicely. By the end of the game, your character is near god-hood, and even Elminster (the most powerful wizard in D&D for the non-nerds out there) comments that he would not want to take you on.
Also, Bioware no longer owns the D&D license.

Speaking of the Video Games Live concert I went to last night, Ancel spoke at the concert he appeared at in London in November 2006 and said they were trying to get Beyond Good & Evil 2 going, see the link below. I really think it should be a Wii exclusive.. but this would be the game to make me buy any other system if it was released.

Ancel has been trying to get BG&E2 going for a few years now with no success. I really doubt it will ever happen.
And the game is an Ubisoft game, so it probably will not be exclusive to one system.

Plus all what Corvin said.

Again, I could very well just want it to happen and am willing to grab onto any thread of hope.. but this is recent and the way he says it and what he's saying really lets on to believe that something is going on in some fashion.. I mean, at the very least, he's working with the composer; that seems a bit down the line of the design/development process for something that's not in the pipes.

Another 2D Metroid.
BG&E2 would be nice, given the cliffhanger ending to the first. Hopefully they could flesh out the game more, I loved the first one but it was very short for the genre and lacking in puzzles, weapons and general variety (felt like Zelda-lite to me).
