I see all these auctions on ebay (that go for $70) talking about an uncensored 1st edition. Are the versions avail. in stores now indeed a cut version and if so, what was removed from the game?

It's highly unlikely any "Uncensored" versions were ever produced. Rather, any modifications to the game were done before it's release. GTA3 was scheduled for release in late September, but after 9-11 Take Two pushed it back, saying they were making changes.
