I could list a million, but if I had to pick just one off the top of my head I'd have to go with Zelda: Ocarina of Time for the N64. Majora's mask is almost as good, but is overly frustrating in spots, and the time travel gets annoying as it necessitates having to do stuff over, which is a big gaming pet peeve for me.

The first game i immediately thought of was Scorched Earth on the PC. Man, i played that game to death. Actually just a year or so ago i found it for download somewhere and downloaded it and played around 400 out of a 1000 matches. Crazy fun game.
