Cheers is classic.
NYPD: Blue Completely original and amazing the first few times you see and hear it. Same goes for ER. Both classic intros.
Drew Carey's have always been entertaining.
Baywatch
No reason to watch the show, all the best parts are in the opening.

Yeah - I recently started watching the S1 DVD. That is a very good opening - great theme with 'Runaway.'

And to remember not to fast-forward when it's over. That's a show that doesn't go to commercial after the opening.
I really like the opening to Arrested Development. It explains the show really quickly and I like the visual style.

My favorite is Star Trek Deep Space Nine. There's just something about the part where the screen is all stars at the beginning that captures the vastness and wonder of space. I also like the beginning to Farscape a lot--it too has that sense of wonder, and really interesting music.
My favorite endings are the ones to The Black Adder--they're unique to their episodes and pretty funny.

Oh man. 
Offhand, I can't think of a WORSE show opening. And the lack of a Chapter Break after the nails-on-a-chalkboard presentation of the opening theme on the DVDs is a major debit to that Digital release.
Having to listen to that screeching multiple times during a "Play All" session might just have many DVD viewers committing hari-kari, post-haste!

Nothing against Jean Stapleton, mind you. I love her as Edith. But she's no Whitney Houston. (Or even Whitney Blake when it comes to beltin' out a ditty.
)

Top Cat (I wonder how many people remember that Hanna-Barbera animated series?)
The Critic (gotta love all that animated New York City scenery)
Gilligan's Island (especially with that catchy song)
X-Files (can't forget the spooky theme song)
Twin Peaks (perfectly sets up the mood of the TV series, and that great theme song)
