This Is Us only has 18 episodes and would rather launch in the fall. It did the same thing last year.
TV doesn't really play by those "traditional" rules anymore.

I understood it as Toby being depressed (and the puppy was in the bed next to him so that ain't what happens).

Toby's parents mentioned how he dealt with depression after his first wife left him. It was pretty clear they intended people to infer her was dealing with depression. There were no previews for the next episode. This was the season finale and they haven't started shooting next season yet.
So I guess that Kate hasn't made any progress in her weight loss over the next year.

Yup, not the dog. Could be one of the parents, or the brother, or all three dying in some kind of tragic accident. But until then, given who they got to play the parents, I suspect we will see one (or both) of them again in S3.

This was a creative decision by the creator of the series to only film 18 episodes per season.
