pest control guy, just so one of his black superiors at work would think he wasn't racist. I took that as the writers being self aware of the lack of black actors in major roles in that show.
Also, Nina's friend Binny from Just Shoot Me was never seen, but always mentioned. Unless you count the urn that her ashes were kept in after she died. Nina even carried it around like it was her friend, and even put Maya's scarf on the urn. I suppose it would have been too much to put a face to the outrageous character Nina kept describing.

there was also the Kenyan runner, one of the Yankee ball players(George lost his birthday card), the head cook at Monk's, the security guard at the bank (fell asleep in rocking chair) & Jackie Chiles.

Can't remember. Did they ever show Alan Brady's sister, who was Mel's wife on Dick Van Dyke Show. They mentioned quite often that Mel was Alan's brother-in-law. Thinking back on all the parties at the Petrie house where Mel was present, don't remember seeing the wife.

I think for Quantum Leap the long running secret revealed in the finale was the question of who was leaping Dr. Beckett

And speaking of Just Shoot me, did they ever show Jack's wife, Allie?

Re: TV Shows & Long-Running Secrets
You think those all-white portrayals of NYC are less than accurate, you should see any television show or movie which features Hawaii as their backdrop. At least they don't do that to Africa as a locale.
As to the Enterprise and her crew, I realize the need for dramatic constraints, but it is a tad unbelievable that they ignore such protocol as shifts, a true chain of command, tables of organization and equipment, etc.

On DECEMBER BRIDE, Harry Morgan played character named "Pete" who wife Gladys was always talked about, but never seen. Ultimately, a spin-off series was made called PETE AND GLADYS was made in which Gladys was seen all the time and was played by Cara Williams.

I recall seeing in (syndicated reruns) at least one first-season episode, a scene that had either Magnum or Higgins talking on a phone to Robin Masters. The character was partying with a group of people on a yacht or private jet, but you never actually saw his face.
If I remember correctly Robin Masters was voiced by Orsen Wells.
