Or a plug adapter, since the UK power adapter will work with US 100-120V 60hz as long as you adapt the plug.

This is a big part of the problem. The scalpers are still buying up a lot of the stock, to try and sell on eBay. However, the eBay markup isn't that high.

I doubt they will be "just as plentiful," as these were launch quantities, which Nintendo has been stockpiling since stopping production on the NES Classic in April.

I do think the supply increased, but I'm not sure the demand decreased. How many did your Wal-Mart start with? How many NES Classics did they have on launch day?
