I know music is very subjective and as good as one person's opinion but seriously...what makes this straight forward cover "incredible" and "fantastic?"

It is not like he changes the tune or makes it his own or does something completely different. It just sounds like an average guy with a semi-ok voice singing the original in a karaoke bar. Just curious what makes it so special to you?

He gave himself a generous hairline in that CGI version lol.

Look the kid is talented. His Nirvana covers were very good and I've seen some videos of him just jamming and he's got skills.
