It's pretty hard to beat Planet of the Apes. Also, the final shot of The Searchers is pretty great.

I always liked the final crane shot in The Untouchables.

And the final shot in Star Wars.

According to the IMDB, the intended final shot was to show the Golden Gate Bridge completely covered in birds, but it was too expensive to pull off. That would've been surreal.
