For me it's Open Range.
Other favorites are Unforgiven, True Grit (remake), Butch Cassidy and the Sundance Kid, Dances with Wolves, Magnificnet Seven (original).

I love the version of THE GOOD, THE BAD AND THE UGLY that I saw in a Times Square theater in 1969 on a double bill with HANG 'EM HIGH. I've seen that version many times--in theaters, on broadcast television, VHS and DVD. Lucky I have that version on DVD.
I hated the extended version when it premiered on AMC in 2003. None of those added scenes needed to be in there. Who cares where Tuco got his henchmen from? They destroyed the carefully constructed rhythm of the version I was familiar with. And the use of 36-year-later dubbed voices by Eastwood and Wallach and someone pretending to be Van Cleef just took me out of the picture entirely.
Having said all that, the western I've seen the most is certainly THE WILD BUNCH. But if I had to pick an all-time best western it would be John Ford's THE SEARCHERS (1956), with John Wayne.

I don't love Westerns so much as the influence they've had on stuff like noir films, sci-fi, et cetera. I've actually always thought it odd that they're always classified as a separate genre, when normally they're action dramas or procedurals or war films. I know my favorite film, The Dark Knight, takes a lot of influence from them. That said:

All time is tied between The Quick and the Dead and Open Range.. westerns, but two different types.

I love the scene in Open Range near the end where everyone is running around shooting. I don't think the pistols of those days were very accurate so it rang true. Unlike most movies today where the good guys always shoot dead on and the bad guys don't.
As much as I don't like the politics of John Wayne I think The Searchers is the greatest western.

I'll never stop being flabbergasted at how much love Open Range gets. I mean, it's a decent flick but it has a sorely underwritten third act with a barely-established antagonist and a rote resolution. Another 15 minutes to flesh out the characters would have made a world of difference.
Also: I totally forgot about The Ox-Bow Incident. More of a deep-dive into the dramatics of mob rule than a traditional western, but an amazing movie nonetheless.

I'm in the Unforgiven camp. It knocked my socks off.
As for classics, I think that High Noon, The Searchers, and The Wild Bunch are all great as well.

If I'd orientated that for 10, this would have been there in the mix

Great genre. I didn't start to appreciate it until I was in my twenties. And thirty years later I'm still discovering gems I never knew about ( like Naked Spur)

My favorite would probably be Tombstone. It's not the best, but it was the first R Rated movie I watched in a theater and a movie I can sit through anytime it's on. So many great scenes and one liners, it's just fun to watch. If we were going older films, I'd probably go Hang Em High.

Here we are with 45 posts and no one has mentioned the Greatest!...The best ever! Lonesome Dove! At least for me...was always The Searchers...but after seeing Lonesome Dove had to put it first. Fantastic performances from all involved, great direction....Duvall is perfect.
I could list about 50 more great westerns.one that surprised me as I thought I had seen all the greats was The Hanging Tree....give it a look, excellent film. Always excited when a new one is announced as they are so few.

For me, it’s Silverado (1985) followed by True Grit (2010).
I’m also a sucker for the Terrence Hill and Bud Spencer spaghetti westerns They Call Me Trinity (1970) and Trinity is Still My Name (1971).
