Gaby Hoffman is appearing in the next Todd Solondz movie and is also appearing in 13, due out next year. Looks like she took a few years off.

What I've seen the cast of American Beauty in since the movie:
Kevin Spacey: Pay it Forward, K-Pax, Austin Powers in Goldmember, The Life of David Gale, Superman Returns, 21 and Recount.
Annette Bening: Open Range.
Thora Birch: Ghost World and Silver City.
Wes Bentley: The Claim. I thought he would be a breakout star after AB, but it looks like he hasn't been able to really do anything.
Mena Suvari: American Pie 2, Six Feet Under (TV), Domino. It doesn't look like she has anything lined up at the moment.
Chris Cooper: More than anybody else in the cast, he went on to better things than before AB. Me, Myself and Irene, The Patriot, The Bourne Identity, won an Oscar for Adaptation, Seabiscuit, Silver City, The Bourne Supremacy, Capote, Jarhead, Syriana, The Kingdom.
Peter Gallagher: Family Guy (TV) and Mr. Deeds.
Allison Janney: The West Wing (TV), Nurse Betty, The Hours, Finding Nemo, Over the Hedge and Juno. Obviously, working on a hit TV series limited her in what she could do.
Sam Robards: A.I.: Artificial Intelligence and The West Wing (TV).
John Cho: American Pie 2, Better Luck Tomorrow, Solaris, American Wedding, Harold and Kumar go to White Castle, American Dad (TV) and How I Met Your Mother (TV).
I haven't seen Scott Bakula in anything since AB.

I'll toss in Guy Pearce. He hit Hollywood with a bang in L.A. Confidential, followed by Memento and a solid Monte Cristo. He seemed to be the next big thing but kinda fizzled out. I know the Preposition got some solid buzz, but this guy should be competing for roles with the likes of Christian Bale & Johnny Depp. It does look like he has 7 projects in the works though. Maybe one of them will be his second coming.
It was The PROPOSITION. And it was great.
Forget "buzz." Guy Pearce has had roles in excellent films like Traitor, The Road, The Hurt Locker. That's hardly fizzling out.
After his experience with The Time Machine, he consciously decided to step away from big-budget/shitty-script movies and concentrate on well written roles he finds interesting.
