I think most of the cast of American Pie movies were unknown before it was a hit:
Jason Biggs
Chris Klein
Thomas Ian Nicholas
Eddie Kaye Thomas
Chris Owen
Seann William Scott
Alyson Hannigan
Mena Suvari
Tara Reid
Natasha Lyonne
Shannon Elizabeth
Eugene Levy
All had done some stuff, but launched after American Pie

Because I'm:
a) not a film buff, and
b) too lazy to check everything personally against IMDB
this thread means less to me than it could if each film had a context-setting release date next to it.
YMMV.
OB"unknownensemble"
The Ladykillers (1955)
Alec Guinness
Cecil Parker
Herbert Lom
Peter Sellers
Danny Green
Jack Warner
Katie Johnson
Philip Stainton
Frankie Howerd
Maybe some of that ensemble were less "unknown" than others at the time. Included among those that were uncredited are:
Kenneth Connor
Stratford Johns
Sam Kydd
All of whom became more familiar on British tv a decade or two later.
