I'd love to see the version of Bespin that we saw in Zahn's trilogy put to film. He had quite an interesting description of the surface.

Wasn't it like that planet in Soldier (crappy movie BTW) where they just dumped garbage all over the surface?

I thought the "uniform environment" was just a storytelling aspect of Star Wars. I guess he would have been happy were it to take place on one planet and they traveled around to and from different eco-systems, but it was just expanded on a galaxy-wide scale.
