If you like the whooshing and grandiose music, Batman ranks up there.
I would second the more recent Dawn of the Dead. The music selection and plot movement/setup was exquisite.

Fincher certainly knows how to do striking opening credits, especially with SE7EN and FIGHT CLUB.
Does STAR WARS really have opening "credits"? It has the title and the scrolling "What has previously happened" text but does that really count as credits? (no cast or crew are credited until the end of the film)

I'm too blinded by a slow-zombie bias to think of that film as anything but terrible, but the credit sequence in Dawn of the Dead 04 is one of the greatest ever!

Agree with Panic room, and I love The Alex Ross art in the spiderman 2 credits.
In regards to Saul Bass, there is an display and review of his work at the design musuem in London. It features designs of his work as well as disregarded ideas.
