Théoden right before the battle of Helm's Deep:
"Where is the horse and the rider? Where is the horn that was blowing? They have passed like rain on the mountain, like a wind in the meadow; The days have gone down in the West behind the hills into shadow.
How did it come to this?"
Another Théoden:
"The Horn of Helm Hammerhand shall sound in the Deep one last time. Let this be the hour when we draw swords together. Fell deeds awake. Now for wrath. Now for ruin. And the red dawn! Forth Eorlingas!"

Not a quote, but also when Bilbo releases the ring (after 60 years of ownership) of his OWN FREE WILL.
It took some coaxing from Gandalf, but that scene always gives me chills. And how the ring lands with a THUD. I think even the ring can't believe it has been released.
So, if a quote, what follows:
"I've thought of an ending to my book. 'And he lived happily ever after, till the end of his days.'"

Eowyn: "I have to save you!"
Theoden: "You already have. "
Gandalf: "Gandalf? That was what they used to call me. Gandalf the Gray. *I* am Gandalf the White. And I come back to you now - at the turn of the tide."
Frodo: "It's a pity Bilbo didn't kill him when he had the chance."
Gandalf: "Pity? It was pity that stayed Bilbo's hand. Many that live deserve death. Some that die deserve life. Can you give it to them, Frodo? Do not be too eager to deal out death in judgment. Even the very wise cannot see all ends. My heart tells me that Gollum has some part to play yet, for good or ill before this is over. The pity of Bilbo may rule the fate of many. "
