That's what I thought as well. Notice too, in the first movie, we see the architect's room (though we don't know it), and Neo is doing the same thing in every screen.

That's because he's not the one yet, and all of his actions are predictable. It's not until he is the one and arrives at the source that his actions start to become unpredictable -- and each screen shows the different possible reactions.

I don't think the monitors aren't limited to one or the other. At times they show things that occurred in the past, recall times it is showing Neo at his job, at the club where he meets Trinity, being interrogated by Agent Smith, etc. At other times it does seem to be showing the choices Neo could make, only to zoom in on the choice he does make. And I think at some times it is showing a mix.

I think we are only meant to gain some insight into the Architect, that he has access to all events that occured in the Matrix and is constantly using that information to look ahead and predict future actions. But that he can't read minds, it's all just an algorithim with a huge data warehouse of human action and reaction to work from...

Now how about this:

What if there is a Matrix-in-a-Matrix, BUT the 2nd level of the Matrix is controlled by humans (whom we haven't seen yet). In order to control the machines.

I assume this has been stated that way as a bluff to play on human emotion of not having the world die because of your actions and thus making the past 5 "one's" choose door #1 without any second thoughts.
This is not a bluff, The Architect states in his dialogue that his predecessors had a much more general connection to the entire human race, thus naturally chosing to save humans and restart the Matrix

Neo, on the other hand, has a much more specific connection ("vis a vis Love") with Trinity, making him choose Door #2 going back to the Matrix to save her.

The Architect has no reason to lie, he knew Neo was going to chose the other door, as hinted at in his scene. He also has sculpted the life of each "One" to his fitting. The machines finally found a reason for a "One" to chose door #2, Love.
