I've only double-dipped once: Dazed and Confused (Flashback Edition and Criterion). Fortunately, the Criterion one was a gift.

The Wild Bunch (part of the Peckinpah collection)
The Sand Pebbles (just ordered the Roadshow version)
Heat

Usually by the time I get around to getting a title, there's a pretty good version out there and I don't double dip for minor enhancements. I will probably upgrade my Die Hard disks since I have the original non-anamorphic versions of all three films.

FF Extended Edition is well worth it and includes the theatrical version. the docs for the FF4 comic and Jack Kirby were awesome.

Se7en-replaced flipper
Silence of the Lambs-upgraded to the SE
Lord of the Rings-FOTR- got the theatrical for a gift, but still got the EE, held out for EE on the others
Gladiator-had to get the extended edition

That's all I can think of off the top of my head. I generally won't upgrade unless the new release is an extended cut, or the original release was flipper or non-anamorphic etc.

Don't care about new packaging, new extras that I won't watch anyway etc.

Shawshank Redemption - One of my favorites. Grabbed the SE when I got it for $4 due to a price error at BB
Star Trek: Nemesis - Ashamed to say I have two of this. But I wanted all of the SE for Trek. Got it for FREE in a BOGO.

LOTR - Upgraded from theatrical to extended on all 3 films. (though I'm not sure that counts as a DD.)

The Good, The Bad, and the Ugly - Upgraded from the Man with No Name Trilogy to the SE.

Superman: The Movie - Stand alone film to the Ultimate Collection

That's it! Not too shabby.

I'm not a big fan of double dipping. Just the following:

Batman
Batman Returns
Donnie Darko

Batman movies for the improved transfers and the extras.

Donnie Darko for the directors cut. I've had it since it came out and still haven't watched it. It's the only dvd not purchased in the last two weeks I haven't watched.
