Don't get me started about movies that are WS on LD and P&S on DVD or are correct WS on LD and monkeyed 1.78:1 or stretched 1.85:1 on DVD. That list would keep many of us here for many posts.
Here are some I know about.
Abbott & Costello in Rio Rita
Alvin & the Chipmunks go to the movies
Amazing Spiderman Cartoon double feature
Captain America (1990)
Making Star Wars / Sp FX Empire (not even on any of the DVD special features)
the Planets - hosted by Patrick Stewart
Spiderman TV Series episodes
the Squeeze (starring Michael Keaton)
Star Trek 25th Anniversary Special
Steel (starring Shaq)
Stryper - In the Beginning
Stryper - Live in Japan

I'm not sure how to qualify the cartoons since you're talking about sampler discs and not season sets. There are a lot of Spider-Man animated sets on DVD - some of the old series, and some of the new - so I have no idea what's been carried over. And as for "Alvin & the Chipmunks Goes to the Movies" - wasn't that a segment within the main cartoon shows?

The Spiderman TV Series episodes I referred to were the Live action ones. The Laserdisc contains Night of the Clones, Escort to Danger, Con Caper, and Curse of Rava. With only 14 episodes of this series and 4 on a Laserdisc set this is the closest thing to a digital set available via production media.
As far as the Alvin and Chipmunks, I believe those are from the series but just ones that have Movie Themes. Batmunk, Back to Alvin's Future, Funny We Shrunk the Adults, and Kong. I was incorrect these are on DVD, just in different collections.

I know i'm years late on this but i just bought a couple of lasers that aren't available.
976-EVIL- There is a dvd but the laser and vhs are the full versions as the dvd lost about 5 minutes of footage that went missing and were never recovered
Highway to Hell (1991)- MGM owns the rights to this classic only previously released on vhs
