They weren't very long, but I did enjoy the making of featurettes on the Christine: SE. It was very interesting to see how they did some of the car effects.

Although they are split into a bunch of mini-docs instead of one hour-long piece, I really liked the making-of's on The Karate Kid and Scarface too. Lots of interesting little tidbits and a good look at the conceptualization by writers Kamen and Stone, respectively.

As a fan I find the Behind the Scenes doc on the James Bond Special Editions fascinating.
