Any of the extended versions of LotR, seamlessly laid out; definitely a standard for other special edition menus. Another good one was The Abyss, special edition

Of late, the new M Criterion Menu is quite good .... classy and elegant.

All of the LOTR DVDs also fit the bill of timeless/classy looking menus

For more exotic stuff Terminator 2 UE and Alien were pretty cool in their day.

But perhaps my favorite all-time menu is 1941 ... as from the audio menu you can play all the music ... uncut

The Best DVD Menu's ever created are the ones for the James Bond films. Period. Especially the Tomorrow Never Dies, which treats you like your 007, very cool.

Honorable Mentions:

Chasing Amy - Criterion
Lord of the Rings - Extended Editions
The Iron Giant - Special Edition
Kill Bill Vol. 1 and 2
Star Wars Trilogy
Star Wars Episodes I and II
Spider-Man - Special Edition

Really? Buffy Season 2's menus annoy me since you have to sit there for a few seconds each time you make a selection.

What's so bad about Seasons 3-7?

I love that one too. Another favorite of mine is the Abyss SE.

Watched Top Gun over the weekend and its menus are pretty impressive. Can't get enough of The Danger Zone.

The best menus are the static ones found on the first DVDs. I hate moving menus, especially if they're unskippable. Granted, there are very beautiful and cool menus (the Bond menus are great, TLOTR is very classy), but I don't want to watch some stupid seconds of fancy animation if I want to, say, change an audio track. Slow navigation is very annoying.

I like the Spider-man: Special Edition menus, because they are an easter egg.

On the Main Menu simply press the 'Up' arrow key on your remote control to highlight the webbing on top of the button. If you press 'Enter' now you will be presented with a much more comprehensive Quick Menu that gives you access to all the features on the disc. This can also be achieved on most submenus by simply highlighting the Spiderman symbol inside the Main Menu button on each screen.
