A Star Wars saga box set that contains theatrical and directors cuts of the original trilogy, the prequel trilogy, and about 12 hours bonus materials for each trilogy. 24 total hours of bonbus material. All glitches fixed, all transfers reference quality, and all DD-EX tracks reference quality. All in a beautiful, classy, and practical packaging.

My dream Box Sets are impossible because of copyright and studios and stuff
I'd like to see a Child's Play box set with SE's of all five films...I'm sure there's more that I just can't think of off the top of my head.

I would also like to have a couple of Romero box sets. One with all of the Dead films preferably given the same attention as the Dawn ultimate edition. The other having The Crazies, Martin, Brusier, Knightriders, etc..

Complete Boston Blackie set
Tex Avery cartoon set
Complete Bowery Boys set(I think this is coming)
Edward G. Robinson set from WB(Brother Orchid, Amazing Dr. Clitterhouse, Sea Wolf, etc)
Errol Flynn war set from WB(Dawn Patrol, Northern Pursuit, Desperate Journey, Edge of Darkness)
Universal 50s sci-fi set
Universal 50s western set(Quantez, Last of the Fast Guns, Joe Dakota, Star in the Dust, Dawn at Socorro)

Off the top of my head -
Action - complete series
Mystery Science Theater 3000 complete season sets (Rhino's doing what they can do though, as someone else mentioned, and I'm happy with that)
Tom & Jerry - complete/uncut
Taz Mania - couldn't get enough of this one when I was a kid
Complete set of Hiroyuki Tanaka's films, or maybe all of them in 3 sets or something
Lupin III each series in a box (like the R2 sets, but with subs)
Set of Takeshi Kitano's films (they had an R2 subbed set like this, but it went OOP looong ago)
Oh, and I have a lot of series selected on www.tvshowsondvd.com that I'd like to see released.

Many seminal Sci-Fi/Horror TV shows are Missing in Action lacking the proper DVD releases they deserve!
We're very fortunate that The Outer Limits and Twilight Zone have been and are being released on DVD in season-by-season boxed sets as they should be. However, the shows listed below were also important in the development of Sci-Fi/Horror programming in the earliest days of television, and need releasing to DVD now!
(1949) Lights Out
(1951) Tales of Tomorrow (not the PD versions that are out)
(1951) Out There
(1954) Inner Sanctum
(1955) Alfred Hitchcock Presents
(1955) Science Fiction Theatre
(1958) 13 Demon Street
(1959) The Man and the Challenge
(1959) Men Into Space
(1959) One Step Beyond (not the PD versions that are out)
(1960) Boris Karloff's Thriller
(1961) 'Way Out
(1962) The Alfred Hitchcock Hour
(1967) The Invaders (Roy Thinnes)
(1974) Kolchak: the Night Stalker

Great films.
I really like rw2516's list. Warners said at the last HTF chat that the RKO Tarzans were on the radar. I will give almost anything for a Boston Blackie set (not to mention a Lone Wolf and Crime Doctor collection) but Columbia never released any of these to VHS so I'm not holding my breath.

A bunch of my Most Wanted have been "in the works" forever....
Alfred Hitchcock Presents season sets - hopefully done like the Definitive Twilight Zone sets...
Amazing Stories
Young Indiana Jones
I don't think the rest of the Crime Story series ever got released...
I'd love a Disney Tin of Song of the South with whatever documentary they have to to say how "bad" it is in today's PC society....
Complete uncensored versions of Tex Avery and Tom & Jerry.
Gulity Pleasure:
Birds of Prey complete series with Unaired Pilot
