The commentary track on Can't Hardly Wait is more hysterical than the movie. basically, they discuss how goot the movie could have been and point out all the stuff they had to cut out to get a pg-13 rating. Their explanations over some of the jump cuts are absolutely the funniest on any commentary I have ever heard.
Plus, watching Can't Hardly Wait is fun because you can spot all the cast members of Six Feet Under.

the thing i like about the Fast times at Ridgemont High Comm Track is that it is longer than the movie by like 15 minutes. cameron crowe and amy heckerling keep talking through the end credits and just talk over a black screen.

Hershcell Gordon Lewis on Blood Feast. His discussion about the bad acting, music, and even directing is not only informative but very funny indeed. Him talking about how they dealt with the budget limitations was great. But even more interesting was how they were able to finance, make, and distribute this movie (arguably the first "mega-splatter gore-fest") in 1963 drive-in America. Fascinating stuff.
I also thought the group commentary on Versus was very funny. Ragging on each other and making jokes about the acting, plot, etc. (although I thought the movie itself was mediocre at best).

Airplane! (ZAZ team is very funny)
Naked Gun Trilogy (Zucker at it again)

I'm pretty fond of Soderbergh's (along with the writer) commentary on The Limey. Actually, all of Soderbergh's commentaries are top-notch.

My absolute favorite is Cannibal The Musical with Trey Parker, Matt Stone, and cast. These guys get drunk while doing the commentary and it is hysterical.
Also Fight Club is great with Fincher, Pitt, and Norton.
Anything with Kevin Smith is also great.

Cannibal: The Musical is by far the best one I've heard. It's especially funny since Trey Parker, Matt Stone and crew are getting more and more drunk as the movie goes on, classic.
