And, to go about as far to the opposite end of the spectrum as possible, mine is Michael Jeck's commentary on Seven Samurai.

I think mine is Guillermo Del Toro's commentary on Blade 2. It's so informative about the movie itself, plus he takes the time for some funny anecdotes, plus all the parts most people hate about the movie, he shares & addresses himself, I always like when a director can admit the flaws of his film, & there is never a long pause, the enthusiasm he has for his work is just awesome.

American Pie is a good one. So is the Fight Club one with Chuck Palunchek and the screenwriter.

Roger Ebert on Citizen Kane. Hands-down, best I've ever heard.

Also, any commentary by John Waters.

Anthony Minghella for The Talented Mr. Ripley. The cast commentary for FOTR was great too.

The collective comms on the LOTR: EE's are really great.

The director comm on Cabin Fever is also pretty awesome. You can tell that guy really has a passion for movies.

He also did a great one for Dark City, which I think was the first commentary track I ever watched.

My favorite of all time is Mallrats. Can't Hardly Wait isn't bad either. Seth Green pretends he's a British stage actor for the first third of it.

Fight Club has already been mentioned, so I'll add another of my favorites that others might not have considered:

Ronin

with Frankenheimer.
