Some I can recalle as well as some from doing a search.

Howard Shore has commentary on Fellowship of the Ring and The Two Towers (Extended Editions) as well as the Seven Platinum Series.

Danny Elfman has commentary on Planet of the Apes (2001), Pee-Wee's Big Adventure, Red Dragon (I think), and probably more.

Jerry Goldsmith has a commentary on the 35th anniversary edition of Planet of the Apes and on Star Trek: The Motion Picture.

Trevor Rabin has a commentary on the 6th Day SE.

Alan Menkin is featured in the Beauty and the Beast commentary.

John Ottman has a commentary on the Usual Suspects SE.

Don Davis has a commentary on The Matrix.

Basil Poledouris has a commentary on the Starship Troopers SE.

Elliott Goldenthal has a commentary on the Final Fantasy: The Spirits Within SE as well as on Frida.

Frailty features composer Brian Tyler.

Mark Isham has a commentary on Blade.
