Ok, if you have 6.1 you have to use the LORT FOTR "Black Speach" from the Council section of the movie. You will hear every speaker you have work and work well its like doing the shound test.
To show off your subwoofer use Blue Crush.

I don't have many friends over that need to be impressed, most have their own HT setup. But, if they want to "hear" my HT, I'll most likely toss in a DVD-A or three... For a movie audio demo, the DTS tracks on FOTR EE, X-Men 1.5 and Das Boot Superbit are pretty nice.

Since none of my friends or family members have a home theater system and they all live out of state, whenever someone visits for the first time, they always want to check out my system. I always show two scenes:
1. Pod Race
2. Depth Charges from U-571
Those two scenes show off just about everything.

I've not got much of a tv, so there's no visual to show off (I think it's either a 19 or 21 inch screen...thing must be more than 10 years old now), but it works fine for me.
In regards to audio show off of use of surround sound etc., I love using Daredevil. The whole movie uses the surround well, specifically chapter 4 "The Accident"(

To demonstrate my system for visitors I have been known to use the pod race from Star Wars Episode I, and the opening to The Fellowship of the Ring. For sound, DTS and THX trailers are fun (especially that cow one on Monsters, Inc.).
I have found that an entertaining way to play a movie for friends is to put together a program of trailers and shorts (like For the Birds, from Monsters, Inc.) before the main feature. That was a big hit the last time I tried it. (I do wish that more movies had quality trailers though, many are scratchy things and not anamorphic. Trailers to older movies tend to just be bad.) My next such program will include the cartoon Carrotblanca from the SE of Casablanca.
My DVD player has a postition memory feature that allows me to record a starting point on five DVDs so I can often (but not always, some DVDs have this feature disabled) go directly to the trailer or short feature.

I don't go out of my way to show off our modest HT setup, but if someone asks "so does good sound really add that much to watching a movie?", I like to play the turbulence scene in Castaway (when the airplane's bathroom door blows off while Tom Hanks is quietly examining a sore finger). Most people visibly jump when that happens.
