my two cents:
I enjoy both editions. The theatrical cut is a more streamlined (or as streamlined as a 3 hour movie can be), linear tale which establishes the fellowship and the story well.
Like the book, the extended edition really opens up story and allows the characters to breathe. And the supplements alone are worth the purchase.
So if you're in the mood for a night at the movies the 2 disc is the way to go. If you're looking to get as close as you can on film to Tolkien's vision and willing to spend some time exploring it's vastness, go for the 4 disc. Myself, I value the merits of both.
