Onimusha easy option disappears?

A little more than half way through the game, I got a message saying that I unlocked the easy skill level. I checked at the menu by picking new game, and it showed easy & normal. But now that I finished the game, unlocked Spirits, the panda suit & the preview, the easy option seems to have disappeared. When I pick new game, I'm only given the option of normal or special outfit. I can't pick easy level anywhere. Is it gone? How hard is Spirits to beat? I only tried about 3 times, but didn't even get past the first level yet. I want the fully loaded option. I wanted to retry on easy to try to get the perfect score to get the demon outfit.

If you noticed, I already had posted a similar question in that post which no one answered. So I thought I'd make a seperate question. Thanks for asking though. Maybe you could start the "One & Only Official Onimusha Thread"?
