Games that are timeless?
i'll tell ya i've been playing Halo 1 on XBOX One and it is just as enjoyable and thrilling as the first time i remember. sure the mechanics are a little dated, but damn if the music and gameplay isn't easy to pickup and play and just get enthralled with again...
so what are the games that to you or most people would consider a timeless game?

That's funny, I put in Halo MCC and the first thing I thought was how dated the game and gameplay felt so timeless isn't what I would call it at all. But I feel that way about a lot of 3D shooters.
A lot of SNES games I'd consider timeless; Chrono Trigger, Link to the Past, Mario World... those games are great even today and the style make the cartoony graphics not feel completely dated opposed to the early days of 3D and low polygon counts.
I'd also put some old adventure games on there; again the art style of something like Monkey Island makes those games easy to play still.

Ms Pac Man. Still fun to play some 25 years later.
Street Fighter games and early Tekken are still good fun as well, especially with a fightstick

The console Kingdom Hearts games. Especially the second one when it comes to the battle system. Still so much fun to hack and slash through some heartless. And the graphics on both titles still look great.
I also can see in ten years NiNo Kuni on PS3 will be considered a timeless classic. That whole game is like playing through an Anime.

Mine is Super Mario Bros 2. I've played it maybe once a month ever since it came out on either my original NES or my old Gamboy Advance. Fun cause you can use the warps and complete the game in about 30 minutes.

To me it seems like the first released games with a new console hold strong. At least in the past. Super Mario for all the NES systems. Halo with the original xbox.
I would say that I love the Gears of War series, and while it has tapered off a bit, I love all of them and hope to play another. It's why I bought a 360.

Super Mario Bros 3, Symphony of the Night, Ocarina of Time, KOTOR, Uncharted 2, Last of Us - I can't see those ever looking dated

Sometimes I fire up the PS2 and play the old ported arcade games. Dig Dug is still a blast to play. Bomberman on the old NES another; especially if you have others playing along.

Metroid (or Super Metroid if you don't like the NES) and Megaman games seem to hold up pretty well. As others have said, 2d games hold up much better than the early 3d stuff. In addition to Street Fighter, I'd say that most 2d fighting games hold up pretty well.
Kingdom Hearts: I like the game, I bought the remakes, but man that targeting system blows. And I still have no idea what the plot of those games are when taken together (similar to Metal Gear Solid).
