Yea, it'll probably be the lowest rated game in this thread, but since I'm a huge Godfather fan, I loved playing the game, living in the world, and meeting the characters.

Probably Baldur's Gate II. Just more of everything that made the first so great. Neverwinter Nights would be close though, not because of the campaign they provided (though I enjoyed it), but I spent many, many hours with the toolset and playing online with friends. I'm a huge Bioware fanboy though, so I've enjoyed all their offerings this decade.

Halo 1.
It was the first game that made great use of 5.1 surround sound IMO. I bought a home theater system basically to play that game.

Interestingly (to me), all sequels. It seems that most game franchises need one game under their belts to work out the kinks and fine tune gameplay (though Halo, Gears of War and Batman Arkham Asylum all seemed to get it absolutely right the first time and should at least be honorable mentions on my list).
