Is there a reason multi-platform games are released later on the PS3?
I'm talking R64 and Dirt here.
It's weird because PES7 is being released at the same time then the 360 version, but some games aren't out for months.

I'm not familiar with the R64 and PES7 acronyms.
There could be any number of reasons why a PS3 port comes out later.
The 360 has been out longer so developers have had more time to work on it. So any game they were working on most likely started production on the 360 and later ported to PS3 with the PS3 development lagging behind.
Since the PS3 has been out for so short a time, the number of potential customers who have a PS3 is much less than the people who own a 360. Some developers may want to delay a PS3 port until later when the number of people who own a PS3 is greater.

I have no idea what games, other than Dirt, you are referring too but...I imagine a lot of different things go into that decision.
Resources are likely the biggest reason. With the 3 consoles being so different in architecture only the biggest software developers can handle a simultaneous 3 (or even 2) platform development and release cycle.
Also, in the case of the Wii, sudden demand can cause late development to cash in. In the case of the PS3 I wonder if it's slow sell through has anything to do with later realease dates as the profit potential compared to the 360 and Wii just isn't there yet.

I'm guessing some of the games you are talking about were in dev for 360 before they even had dev kits for the PS3. Once it has been out for a while I'm sure the games will be out on the same day as its always been.

Those are all the PC Rainbow Six games. Are you counting the expansion packs as separate games or something? Expansion packs are not full fledged games...
