I'd rank in this order...
GTA: SA - most potential single player hours.
Splinter Cell: Chaos Theory - if you liked the other ones, this one is even better.
Doom 3 - mixed reviews, I have the PC version and have played the Xbox version. Decent Game
SW - no idea if it's good... looks like you just play the movie. Past games of this nature didn't do much for me. YMMV
Lego SW - twist on same sort of thing... once the novelty wears off, you're done. I've heard it's very easy.
I'd consider Psychonauts if you like platformers.

Of those : GTA - It's amazing on the PS2; I imagine the Xbox version will be even better. SC : Chaos Theory is also very good and looks amazing. It can also be had for less -- I believe it's $29.99 at EBGames, which is a bargain. Rent Lego SW, avoid Ep III. Doom 3 looks fantastic, but feels kinda generic.

yeh ive heard ep. III game sucks but i need my star wars fix!
anyway, ill probably go with GTA: SA. For a while i was thinking about Doom III and Chaos Theory ($30 is a steal), but with SA ive heard ill probably spend more time just beating the main game and doing some sight-seeing than playing and finishing both Doom III and Chaos Theory......
EDIT: Oh damn just checked EB seems SC:CT is back up to $50.......this further solidifies my choice of SA.........

Doom 3: CE -- plain and simple -- that is my favorite game of all time. Especially if you have a HD Widescreen TV with 5.1 Surround. If you have that kind of setup...no other game in history has the immersion factor that this one has.

Good choice....Doom3 was ok, but once I beat it...I hav enot touched it again. LIVE play was lackign also.
I hate Splinter Cell...too slow, but I can see where some would LOVE it.
Lego SW was fun, not a purchase though....easy game.

Although it's not on your list, it's somewhat related to GTA - Mercenaries. God, I still can't get enough of that game six months after it shipped. I love just plugging in for a mission or two and not losing half my day to it.

If you can't wait for GTA:SA try these which are relatively new and are pretty good games for their respective genres:
Jade Empire (RPG)
Forza Motorsport (auto racing)
Unreal Championship 2 (FPS)

The reason I bought my XBox: Panzer Dragoon Orta.
After that, and I'm very surprised no one has said it yet, Halo and Halo 2. Also: Ninja Gaiden, Crimson Skies, and for games that are just absolutely engrossing and fun; Otogi and Otogi 2.
