Both Gamestop and EB are advertising it. Sounds pretty much official.

Gamestop and EB pull release dates out of their butt.
It's the official date. EB says so specifically and Gamestop says "just announced" (which could mean "just announced by Gamestop" but almost certainly refers to Activision). That and the facts that a) they both have the same date and b) they both started prominently advertising it on their front page on the same day seems to point pretty definitively to an official announcement.

If it's an official date, why isn't it listed on the official site (as far as I can see)?

Activision hasn't issued the press release yet. I'm 99.9999% sure it's official for the simple fact that Gamestop and EB are not going to magically pull the exact same release date out of their ass at the exact same time and prominently display it on the front page of their sites as the final, official date, which would be a monumentally stupid thing to do if they were just guessing. I certainly wouldn't expect additional confirmation to appear first on the official site seeing how it's id we're talking about here (id has never shown much more than a sliver of interest in keeping their websites updated, I don't think the Doom 3 site has been changed since last year).

It might be official, I'll give you that. But EBGames and Gamestop frequently agree on the wrong release date when it comes to games. Case in point: both had Half-Life 2 listed as being released 9/30/2003. That date wasn't changed by either until mid-september, if not later.

Not a very good case in point. The reason they both had the game listed for release on that date was because that was the official date; if you recall Valve and Vivendi made a very big deal about a September 30 release when the game was announced and continued to insist it would be out on that date even after it became pretty obvious it wasn't going to make it. Valve didn't admit the game had been delayed until something like a week before the 30th.

I know nothing's announced yet, but considering the first two Dooms made it to the 32X, SNES and GBA of all things, is there any chance of this making it to the Gamecube or PS2?

Never. The Xbox can barely handle it. Even on the Xbox it chugs pretty badly at spots.
