I'm not sure of the all the settings used on the TV as we haven't fully calibated it well as we should have, but we do leave it in Full for all the Xbox titles. It seems to look correct. I think most of the time we leave it in "Movie" mode. We've never gone in and created any custom video modes on it.
As for the evil elephant looking stuffed animal it actually is a large gray heavy foam gargoyle that isn't very photogenic. He used to sit on top of the subwoofer out of frame on the right side of the picture to discourage the cats from getting behind our old Sony big screen, but he isn't needed for that any longer.
