Because it's hard to chew?

Granted, the coconut in Almond Joys is basically ground up to the point of being pre-chewed. But get a mouthful of shredded coconut, and it seems like you need to chew it for ten minutes before you can swallow it without choking.

I used to like shredded coconut. My go-to birthday cake was German chocolate cake. Just lost its appeal as I got older.
